We visited cheese manufacturer Ciaolatte, who produce the king of cheeses, Parmigiano Reggiano. We met Serena, whose family owns Ciaolatte. She showed us what goes into making each delicious wheel of Parmigiano, and along with the strict criteria that the cheese must pass to earn its coveted DOP stamp; from the type of cow, to the aging process.
