How to make classic lasagna from Bologna
Lasagna is one of the those global Italian recipes for which there are loads of variations, and sometimes it is also cooked without the love and care it deserves. So we went to the source of this iconic dish: Bologna. Franca showed us how it should be made. The key things are:
Make a ragu using a mixture of ground, good quality beef and pork
Cook the sauce for a couple of hours
Make the pasta - it's really easy - and cook it before assembling the dish
Make sure to use at least 7 layers of pasta - and be a bit mean with the ragu and quite generous with the white sauce. And here is the video:
