Bean and Pasta Soup from Tuscany
Tuscans are known throughout the rest of Italy as 'bean-eaters'. They love their beans and there are a wonderful array of varieties which are only grown in Tuscany. They lend themselves to pasta, contorni or vegetable side dishes (they're delicious are a long slow bake) and soup. And there is a pasta soup starring a red bean called Rossi di Lucca, and tagliatelle pasta, confusingly called tagliolini sui fagioli.
