Bruno e Franco, Via Oberdan, Bologna
I’ve always liked the old fashioned courtesy and charm of Salumeria Bruno e Franco in Via Oberdan and being slightly away from the main square it seems quietly busy with local shoppers not tourists. Glance upwards to the other side of the road and you’ll see their pasta laboratorio, or workshop on the first floor of the corner building; the big glass windows allow you to spy the women hard at work. We had the good fortune to get closer and to spend an hour with Grazia Foschini and her team, watching them produce the daily batch of fresh pasta.
They say repetition is the mother of skill and my goodness me, Grazia, Angela and Mala are experts: olympic standard tortellini twisters. Take a look at video and admire for yourselves!
